Deeply rooted in Chef Brodi's farm-to-table philosophy, artfully prepared dishes feature authentic, seasonal and sustainable ingredients often from local purveyors and suppliers. One example is the blackberry lemon sorbet from Muskoka's Belly Ice Cream Company.
Adding a bit of magic to the menu is a soup featuring Cinderella pumpkin from the Holland Marsh area located near Bradford, ON. Even the wine used to deglaze is locally sourced-- CEV Sauvignon Blanc from Colio Winery, located in Harrow, ON in Lake Erie North Shore. "The Cinderella pumpkin has a natural sweetness when cooked, with a meat colour similar to butternut squash," says Brodi. "We sweat out leeks, white bulb onions, garlic, bay leaves, then add the pumpkin, vegetable stock and finish off with 35%cream." The pumpkin seeds themselves are toasted with a spice mix of tangerine peel, red chilli, sansho (Japanese pepper), nori, sesame seed, and poppyseed. The soup is topped with a luxurious whipped cream chantilly with nutmeg folded in.
A lamb sirloin option hails from a little further afield, Innisfail, AB. It is grain-finished and also Halal-certified. It is coated with an exotic spice mix of toasted fennel, chilli flakes, coriander seed, coconut sugar, garlic and olive oil, before being pan seared so the sugar caramelizes, creating a bit of a crust. A signature root vegetables mix features heirloom carrots, candy cane beets, and valentine radish grown by Cookstown Greens, Thornton, ON.
